  • 750g apples, peeled, cored and diced
  • 250g caster sugar
  • 250g sultanas
  • rum
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 2 teaspoons mixed spice
  • 500g plain flour
  • 4 teaspoons baking powder
  • 200g nuts of your choice, coarsely chopped
  • 1 tablespoon unsweetened baking cocoa

  1. In a bowl mix apples with sugar; cover and set to one side. In another bowl drizzle sultanas with rum and cover; set to one side and steep overnight.
  2. The next day preheat oven to 200 C / Gas 6. Grease two loaf tins or line with greaseproof paper.
  3. Mix apples, sultanas and rum together in a bowl. Mix all the remaining ingredients in a separate large bowl. Add the apple mixture and stir till evenly combined and moistened with no traces of flour remaining.
  4. Spoon mixture into prepared baking tins; bake in preheated oven till browned and firm about 1 hour. Let cool completely before cutting.

Bake until golden brown and a cake tester into center comes out clean, 35 to 40 minutes. Transfer to a wire rack to cool slightly before serving.

How to Make a Dump Cake

Not sure how to make a dump cake? They are actually ridiculously easy as their name implies. All you really need is some fruit, a cake mix and some butter to make a dump cake. But I really like to add extra flavor so I tossed my apples with brown sugar and cinnamon to really bring out those fall flavors we all know and love.
Because this dessert is a bit sweet, I like to add fresh pecans for more texture and a break from the sweetness. It adds so much flavor to this apple dump cake! But if you don’t like nuts or just don’t have them on hand, you can definitely leave them out.

The key to any recipe for dump cake is to sprinkle a cake mix over your fruit and add butter. This recipe uses melted butter and since there is no mixing of the batter, you’ll want to make sure you drizzle your butter slowly over the top to get as much of the cake mix covered as possible. Otherwise you can end up with little powered spots of cake mix on the top of your cake.

A dump cake might not be the prettiest dessert when it comes out of the oven, but it sure tastes great!


Why Use Frozen Apples and Not Fresh?

Freezing chopped apples completely changes the texture, making them ideal for baking with. However, less so for eating them raw again.

It removes a lot of the apple juice when thawed and drained, reducing the weight to approx 300g. Note, I drained the juice away for quicker simmering times, but I'm sure you could defrost all cook it all together with a few more minutes.

But, the apples become spongy, making them great for simmering with other dried fruit. They won't disintegrate while simmering, unlike raw apples.


Marie-Hélène's Apple Cake

My friend Marie-Hélène Brunet-Lhoste is a woman who knows her way around food. She's a top editor of the Louis Vuitton City Guides (and one of the restaurant critics for the Paris edition), so she eats at scores of restaurants every year, and she's a terrific hostess, so she cooks at home often and with great generosity. There's no question that she's a great home cook, but for me, she's the most frustrating kind of cook: she never follows a recipe (in fact, I don't think there's a cookbook to be found on her packed bookshelves), never takes a note about what she does, and while she's always happy to share her cooking tips, she can never give you a real recipe—she just doesn't know it.

I've watched her in her kitchen, in the hopes of nabbing a recipe by observation, but it's impossible. Like so many really good cooks, Marie-Hélène starts off with a set of ingredients that could be annotated and recipe-ized, but, once she starts mixing, stirring, boiling, baking, or sautéing, she makes so many mid-cooking adjustments that you just have to throw up your hands and content yourself with being the lucky recipient.

And so it was with this apple cake, which is more apple than cake, rather plain but very appealing in its simplicity (the chunks of apple make a bumpy, golden top) and so satisfying that we all went back for seconds. Despite knowing that it was futile, I asked for the recipe, and, of course, Marie-Hélène didn't really know.

"It's got two eggs, sugar, flour, and melted butter—oh, and rum," she said. "I mix the eggs and sugar together and then I add some flour, some butter, some flour, and some butter." When I asked how much flour and butter, I got a genuinely apologetic shrug, and when I asked what kind of apples she used, the answer was, divers, or different kinds.

Since there were only a few major ingredients, I thought I could figure out the recipe—and I did! (Although not on the first—or second—shot.) I've added baking powder to the mix (and I have a feeling Marie-Hélène might have too) and a drizzle of vanilla, which you can skip if you want. What you don't want to skip is the pleasure of having diverse apples. It's really nice to mix up the fruit, so that you have some apples that are crisp, some soft, some sweet, and some tart.


Apple Cake Recipe Tips

  • Use good baking apples. You want tart, firm baking apples that will hold their shape in this cake. I used Gala apples, and they were excellent here. Pink Ladies, Mutsu, Jonathan, McIntosh, or Granny Smith apples would be good choices too.
  • Spread the apples evenly in the pan. To make sure that you get plenty of apples in every slice of this cake, use a spatula to evenly spread the apples in the pan after you pour in the batter. Yossy writes that they should be “well dispersed and go all the way to the edges of the pan.”
  • Tap the pan on the counter before you put it in the oven. This will help the apples settle in the pan, releasing any air bubbles that are trapped in the batter.
  • Let the cake cool before slicing and serving. As with all baking recipes, it’s tempting to devour this delicious cake as soon as it comes out of the oven. However, if you allow it to cool, it’ll have a moister, more cohesive texture and stronger spiced apple flavor. Let it cool in the pan for 15 minutes. Then, remove it from the pan and transfer it to a wire rack to cool completely.

  • 1 1/2 cups all-purpose flour
  • 1 pinch salt
  • 7 oz. (200 g) unsalted butter divided (6 ounces cold, cut into 1/2-inch pieces, and 2 tablespoons melted)
  • 1/3 cup ice water
  • 3 1/2 tablespoons sugar
  • 4 large apples cored and cut into 1/4-inch-thick slices
  • 2 tablespoons apricot preserves melted and strained
  1. Using a stand mixer with a paddle attachment, mix the flour, salt and butter on low speed for 2 minutes, slowly add ice water until the dough becomes a ball.
  2. Transfer the dough to a lightly floured work surface and knead 2 or 3 times, just until it comes together. Pat the dough into a disk. On a lightly floured work surface, roll out the dough into a 16- to 17-inch round about 1/4 inch thick. Line a large unrimmed baking sheet with parchment paper. Roll the dough around the rolling pin and unroll it onto the prepared baking sheet.
  3. In a small bowl, combine 2 tablespoons of the sugar with the remaining 1 tablespoon of flour and sprinkle over the dough. Arrange the apple slices on top in overlapping concentric circles to within 3 inches of the edge. Fold the dough over the apples in a free-form fashion. Brush the apples with the melted butter and sprinkle with the remaining 1 1/2 tablespoons of sugar. Refrigerate the unbaked tart until slightly chilled, about 10 minutes.
  4. Preheat the oven to 400°F (207°C). Bake the apple tart in the center of the oven for 1 hour, or until the apples are tender and golden and the crust is deep golden and cooked through. Brush the apples with the melted preserves. Slide the parchment onto a wire rack and let the tart cool slightly before serving.
