In a bowl, mix the two types of flour, yeast and salt. Pour the warm water little by little and mix until it can knead. Pour on the work table and knead, adding, if necessary, water or flour. Add the oil while kneading and when you get an elastic and non-sticky dough, put it in a place away from drafts to double its volume.

After leavening, place the dough on the work table, add the seeds and knead several times to incorporate into the dough. Give the dough an elongated shape and place it in a cake pan lined with baking paper. Sprinkle a few seeds on top, then put in the preheated oven at 180 degrees C for about an hour (check with a toothpick).

When ready, remove from the oven, sprinkle with a little water, then cover with a kitchen towel and leave to cool.

Bread with Whole Wheat Flour and Flax Seeds

- White flour type 000 is mixed in a bowl with whole wheat flour (choose a bowl with a large diameter because in this bowl you will start kneading the dough).
- Add salt, yeast, flax seeds, olive oil to the bowl, so that the salt is placed at a distance from the yeast (salt inactivates the yeast).

- Gradually add water and mix the ingredients by hand until all the flour in the bowl has been incorporated. A soft dough is formed in a short time, easy to shape, sticky at first (if you think it is necessary you can add extra flour or water, depending on the consistency of the dough obtained).

- After the entire amount of flour in the bowl has been incorporated, place the dough on a lightly floured work surface and knead with your hands for 7 minutes.

- Leave the dough to rise, covered with a bowl, for an hour in a warm room, away from electricity.
- Grease a large tray with oil or line the tray with baking paper / non-stick baking sheet.

- Put the dough again on the previously floured work surface, knead a little and shape it with your palms so that it acquires a round shape.

- Put the dough in the previously prepared tray, cover it with a kitchen towel or a bowl and let it rise in the tray for about 1 hour (I let the dough rise at this stage for about 40 minutes - after this period of time the dough stuck to the walls of the bowl and I had to put it in the oven a little faster than I estimated).

- Heat the oven to 230 degrees c.
- Sprinkle a little flour on the surface of the dough.
- Cut the surface of the dough according to your preference.

- Bake the dough for about 35 minutes in the preheated oven.
- The baked bread is left to cool on a grill.
