Beat the egg whites with a pinch of salt until they froth, then gradually add the egg yolks, sweetener, water, half an orange juice, oil, flour, starch and baking powder.
From the composition obtained, pour about 2 tablespoons into several cups, to mix with natural food colors, various colors, depending on the chosen model. I chose a model with Christmas trees, fir and holly branches, but also cones, so I needed green, yellow, red, but also cocoa for cones. I mention that now we have to add a teaspoon of flour to each cup, because the dough for the roll is fluffy, and we now need to draw with the pooch and be a little stronger, as a consistency, to be able to draw the flowers. , cones and branches.
Sketch the model on a baking paper, put it in the freezer for 5 minutes, fill it with the desired colors, then put it back in the freezer for 5 minutes.
Then pour the rest of the dough for the roll into the tray. Put the tray in the oven, maximum 10 minutes, over medium heat, it should remain white-slightly golden. If you bake it too much, it tastes like an omelet and becomes dry, sticky.
When it is ready, take it out on a kitchen towel on which I sprinkled powdered sugar with rum flavor, roll it carefully and leave it to cool.
For the filling: peel the oranges, cut them in half. I needed 5 halves.
Beat with mascarpone cream mixer with liquid cream and Bourbon sugar. Carefully unwrap the roll, fill it with cream, but not to the brim, so as not to bite, place the oranges, then roll again. It can be rolled up on a piece of cling film to make sure it fits snugly. Leave to cool until ready to serve.
