  • 200g plain flour
  • 1/2 teaspoon salt

  • 160g porridge oats
  • 70g raisins
  • 220g plain chocolate chips

  1. Beat butter or margarine, sugars and vanilla until light and fluffy. Add flour and salt, mix well.
  2. Dissolve bicarbonate of soda in boiling water and add to mixture. Stir in oats, raisins and chocolate chips.
  3. Drop by teaspoonfuls onto ungreased baking tray. Bake at 180 C / Gas 4 for 10-12 minutes. Don't over cook.

These cookies taste great! I didn't look at the number of cookies, but whilst this says 18, I managed to get 28 digestive sized cookies out of this recipe. I put them in a fan oven at 170, but they needed around 18-20 minutes - guess that could be my oven, it's new so not sure what it's like yet. Would definitely recommend and I will be baking these again soon-08 Mar 2015

I followed the instructions exactly...twice. Both times the cookies spread out really thin, the edges burnt and the middles were still raw. The burnt edges stuck to the sheets and the middles crumbled. I have four cooling racks of oatmeal, chocolate crumble... What did I do wrong?-15 Jun 2000

This cookie was awesome. When sampling the dough it seemed as though it was not sweet enough...but don't add more sugar. Once the cookies baked they were perfect and sweet. I did add 1/4 tsp of nutmeg and 1/3 tsp of cinnamon. It added the perfect amount of spice. When you are baking the cookies don't over bake them. The centers will look doughy and the very edges will look lighly brown (this took about 10 minutes). Take them out...they are done. WAIT 2-4 minutes to take off of the tray (this allows the centers to continue cooking slightly). I found they did not crumble if you turned them upside down on the cooling rack. You might find this hard to believe but we didn’t have Netflix until this time last year. Everyone was all, Netflix and chill..and we were like, what’s wrong with cable?

When we finally caved, one of the first things we watched was the documentary Cowspiracy. Up until that point, I hadn’t taken the time to understand the environmental effects of our food choices and it was enlightening, to say the least.

After that we went on a bit of a documentary binge, absorbing all of the plant-based diet information we could find. One of them included Forks Over Knives starring a prevalent surgeon by the name of Caldwell Esselstyn Jr.

Dr Esselstyn has made it his life’s work to promote the healing powers of a plant-based diet and his family saw his passion and followed suit. His son, Rip Esselstyn went on to create the Engine 2 Diet which helped inspire his fellow firefighters to adopt a plant-based lifestyle and improve their overall health. Yep, that’s right. Burley men eating vegetables and liking it too!

Slowly but surely, Rip began to grow his brand to include a plant-strong food line that can be found at Whole Foods, the Engine 2 weekend retreat and immersion programs, and eventually a cookbook co-authored by his sister, Jane.

The recipes featured in the book are made entirely from whole foods without any added oils and minimal salt and sugars.

How to make these chewy oatmeal raisin cookies:

First:

In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl using a handheld mixer, cream together unsalted room temperature butter, granulated sugar, and dark brown sugar until the sugar is thoroughly mixed into the butter and the whole mixture is light and fluffy. This should take about a minute or two on medium-high speed. Scrape down the sides of the mixing bowl after creaming.

Second:

First, make sure both of your eggs are at room temperature (see below, for a pro-tip!) and separate one of the eggs. You do this by cracking the egg open and moving the yolk from one side of the shell to the other while the egg white drips out. Once separated, add the yolk to the creamed butter. Save the egg white for another use, if desired.

Pro-tip: easily bring your eggs to room temp by placing them in a dish of warm (not hot) water for 5-10 minutes.

Add the second egg and vanilla extract and then whip them all in for about 30 seconds - 1 minute, or until the eggs are fully incorporated, scraping down the sides halfway.

Third

Measure out the dry ingredients. If you have a scale, weighing your flour is the most accurate way to measure it. Otherwise, scoop the flour into the measuring cup (instead of using the measuring cup to scoop it out) to get the second most accurate measurement.

I know this sounds very particular, but trust me-- it's worth it!! And scales are only about $10 on Amazon!

Fourth

Add the dry ingredients to the creamed ingredients and mix, starting on slow and building up to medium speed, for about a minute or so, or until all the flour is fully incorporated. It will still be a bit wet. Scrape down the sides to make sure everything's fully incorporated, too.

Fifth

Add in the old fashioned oatmeal to the batter and mix in-- starting on low and building up to medium speed -- for about 30 seconds to a minute, or until the oatmeal is fully mixed in. The batter will be starting to get dryer and thicker. This is just what we want!

Sixth

Remove the paddle from the mixer or put down your hand mixer and mix in the raisins and chocolate chips with a rubber spatula or wooden spoon. This will help them to mix in without getting all crunched up by the mixing paddle.

Seventh

Scoop the batter out onto a parchment paper lined baking sheet. I like larger cookies so I scoop them out by 1.5-2 tablespoons. You can scoop them out smaller if you like smaller cookies, though.

Bake them for 10-14 minutes at 350 degrees, depending on the size of your cookies. Let cool at room temperature and enjoy!

What’s the secret?

When raisins and other dried fruits are used in baking and in other recipes, they’re often hydrated first, to soften and plump them up. Typically this is done in hot water.

I do this in hot melted butter — for an hour! And not just melted butter, the raisins hydrate with vanilla and cinnamon. So not only do they become soft and plump, but they’re also infused with those flavors.


How To Make Oatmeal Chocolate Chip Cookies

Once you’ve gathered your ingredients, it’s time to prepare the cookie dough. Here’s a simple breakdown of exactly how to make this cookie dough:

  1. Whisk together the dry ingredients: It’s best to whisk together the flour, baking soda, cinnamon, salt and then stir in the oats.
  2. Cream the butter and sugars together: You’ll only need to mix them together for 1 to 2 minutes or until they’re well combined.
  3. Mix in the egg and vanilla: Once you’ve mixed in these two ingredients, it’s best to stop and scrape down the sides of your bowl, then mix again. This will ensure that all of the wet ingredients are well combined. Your mixture should look like the photo above on the left.
  4. Mix in the dry ingredients: I prefer to turn the mixer off, add the dry ingredients, and mix on low speed until the dry ingredients are just combined.
  5. Add the chocolate chips: You can mix these in on low-speed with the mixer or by hand, either ways is fine! Once the chocolate chips are added, your dough should look like the picture above on the right.
  6. Chill the dough: Cover tightly and let it chill in the refrigerator for 30 minutes. This will help the butter firm back up and the flavors come together a little more before baking the cookies. Colder butter = thicker cookies!
  7. Scoop, flatten, and bake the cookie dough: I use a 1.5 tablespoon cookie scoop and suggest slightly flattening each ball of cookie dough to help ensure that they spread a little. It’s also crucial not to over bake these cookies – check them at about 10 minutes and see how they look. The cookies are done when the tops are set and the edges are lightly browned.

The cookies will be a little soft when they come out of the oven, but the residual heat from the baking sheet will help them finish setting up. I like to let them cool on the baking sheet for 5-10 minutes, then let them cool completely on a wire rack. You can also just dig into them while they’re still warm, the choice is all yours!

I substituted a banana for the shortening, as suggested below. Note that this does give the cookies a distinctly banana flavor. As many others have noted, if you bake as recommended, the cookies end up flat I found the edges were well-browned, and center still uncooked at 10 minutes. In my second batch, I lowered the temperature to 325, and let them bake for the full 15 minutes. This resulted in thicker evenly-baked cookies. A temp in between is probably correct. Be sure to spray/grease your cookie sheet, even if it is non-stick, and let the cookies cool at least 10 minutes on the sheet before trying to move them to a cooling rack. A good recipe, but I'm still looking.

This is my go-to cookie recipe---every time I take them to an event, someone asks for the recipe. I make the recipe as written, usually with a mixture of semisweet chips and 60% cacao chips. I refrigerate the dough before scooping out and baking this way, they don't come out super-thin. They definitely do crisp up, especially the day after baking. One of my favorite recipes!

these are tasty but I've made them twice, following the recipe exactly, and they come out too thin and brittle. Have to change the recipe somewho or find a different one.

A little more brittle than I had hoped, but tastey nonetheless. I omitted the nuts and used 1 C each of choc chips and raisins. I used a banana instead of the shortening as someone suggested and no one even noticed. A great way to hide a few calories.

I looked at the reviews - and tweeked it myself. 1 cup brown sugar - 1/2 cup of white sugar. Left out the shortening out all together (as one other person said "who has shortening?"), instead I substituted one very ripe banana - to keep the cookies moist. DELICIOUS! Delicious. Read others' advice & altogether made the following tweaks: 3/4 c. white sugar, dashes of ground cloves & cinnamon, about 2 tbl. extra butter. Regarding the baking time, I tried a regular oven & convection, both at 350 - convection turned them thin & too too crisp. 10 minutes in the regular oven, left to cool a bit on the tray & they were moist, chewy & delicious.

The best cookies I've made in years. Just AWESOME. The only note iɽ add is you may want to cut cooking time down to about 12-13 minutes (as opposed to 15) so that the cookies are softer. Also, to keep these (and any cookies soft), just store in a tupperware container with a slice of apple. Even without that though, these were still amazing the next day. A definite keeper- we devoured all of them in one day!

Very good cookies. Being from the South, used pecans instead of walnuts. Mix em up, spoon onto tray and pop in the freezer. When they freeze, drop them in a zip lock and just fix what you can eat hot from the oven!!

Yummy. What more do I need to say? These cookies look like gourmet cookies, they had a light and chewy texture, just the right amount of sweetness. Nearly perfect. These were the best chocolate chip cookies ever. I brought some to my friends, and they loved them. Today I brought some to work, and they were devoured. I can't wait to go home and make more.

I would probably choose another recipe, b/c these cookies came out thin and brittle. But if you want to try them, the best way that I found was to lower the cooking time and temp, grease the pan well, and remove the cookies from the pan with a metal spatula as soon as they can be removed the first few tries, i had a lot of broken cookies b/c they were overcooked and stuck to the pan.

This is a fantastic recipe. I have made it several times, but my most recent variation has worked the best: use butter-flavored crisco for the shortening. I buy this in the stick form and keep it in the fridge, and use it only for these cookies. The extra butter flavor was great. I also only cook them for 9 minutes - they come out slightly undercooked so I leave them on the sheet for a couple of minutes before putting them on the rack to cool. The cookies stay chewier this way, which I prefer to a crunchy cookie. The only bummer is they stay fresh for only a couple of days, even stored in tupperware. I'm going to try freezing them next time and see if that helps. Far and away the best cookie recipe combining oatmeal, raisins, and chocolate chips that I've tried!

Yummy! My husband and I polished off this batch of cookies in 2 days. I used margarine instead of shortening, (who has shortening on hand?) and also used the entire bag of chocolate chips instead of the 9 ounces. I also added flaxseed meal to "health" them up a bit. Delicious cookies.

I love crunchy cookies with great flavor. This recipe delivered as the combination allowed for each individual flavor to show thru! They came out thin and very large- so they are impressive to see, as well as taste. The recipe did require some modifications since my pantry was low: Substitute 1/2 cup margarine for shortening, and left out raisins. Additionally, I reduced the cooking time to 13 minutes per batch! These were fabulous cookies! Instead of all choclate chips I subsitituted 1/2 each of chocolate and white chocolate and used all dark brown sugar.
