How to make the sand cake
Separate the yolks from the whites.
Beat the egg whites until stiff and set aside.
Put the butter cut into chunks with the sugar and the egg yolks in the bowl of the mixer and whisk until creamy.Add the potato starch, baking powder and the grated zest of a lemon and continue to whisk.
Finally, add the whipped egg whites with gentle movements from bottom to top, trying not to dismantle the dough.
Pour the mixture into a greased and floured cake stand, then level it well.
Bake the sand cake in a preheated oven at 180 degrees for about 40 minutes.
Remove the sand cake from the oven and let it cool on a wire rack. Then serve it.
