Bacon Potato Pancake Recipe from of 18-07-2007 [Updated on 28-08-2018]
Lately I bought some books with recipes of international cuisine. Bacon Potato Pancakes are a typical Irish dish (Boxty potato pancake) and are really great for preparing a delicious dinner.
How to Make Bacon Potato Pancakes
Wash and peel the potatoes, cut them into chunks, then blend them until they have a semi-liquid consistency.
Add the flour, milk and salt and mix to form a thick batter.
Melt a small piece of butter in a non-stick pan (I used the Romagna text), pour a ladle of batter and roll it out to form a disc.
Cook the pancakes over medium heat for 3-4 minutes per side.
Cook the bacon slices in a non-stick frying pan until they are crispy.
Arrange the salad on each pancake, 2-3 slices of bacon, a little cucumber cut into slices and sprinkle with pepper.
Roll the pancakes and serve hot.
