This chicken and pesto pasta salad was my dinner last night, although I really like Greek cuisine, after 15 days of pita gyros and tzatziki, I was craving home flavors, so I pulled a jar out of the freezer of pesto that I had prepared and frozen before leaving and I dressed a nice cold pasta, ahhh what goodness! Today I will continue to delight myself with typical Neapolitan recipes, it takes a nice Caprese salad for lunch and to end the week well tonight I will go to eat a pizza on the seafront, yes, I admit, when I'm out the only thing I miss in Naples it's food, and as soon as I set foot in town I have to eat pizza and mozzarella, just so I'm happy to be back home;) Well that's all for today, I hope to come in handy that with my new pasta salad and that have a good day, docks: *
How to make pasta salad with chicken and pesto
Cook the pasta in abundant salted water, drain it al dente and place it in a bowl drizzled with a little oil
Grill the chicken breast in a pan with a drizzle of oil, then add salt and cut into small pieces
Put the tomatoes cut into 4 parts, the rocket and the chicken in a large bowl, add a drizzle of oil and mix
Add the pasta and pesto
Stir to spread the dressing well, then put the Pasta Salad with Chicken and Pesto in the fridge for an hour before serving.
