Puffed rice biscuits recipe of 18-08-2014 [Updated on 25-09-2017]
The recipe for these puffed rice cookies is my variation of the desert rose cookies from a while ago. I replaced the almond flour with the coconut one, the raisins with the chocolate chips and the corn flackes with the puffed rice ... Easy and delicious biscuits !!! Even if on vacation, I could not skip the appointment with the Monday dessert, I hope you like the recipe and I wish you a good start to the week, kisses.
How to make puffed rice cookies
Whip the butter with the sugar until you get a cream, then add the egg and mix
Once the egg is blended, add the flour, coconut flour, baking powder and chocolate chips.
Knead well until you get a homogeneous mixture
With slightly damp hands, take small portions of dough and shape it into balls. Then pass them in a dish in which you will have put the puffed rice.
Roll the balls to cover them entirely with rice
Place the biscuits on a lined baking sheet and bake in a preheated oven at 180 °. Bake the cookies for about 20 minutes
Once golden, let it cool
serve your cookies to accompany your tea or coffee :)
