L'artichoke salad raw is a very easy to make side dish that lends itself well to being served with both meat and fish dishes. To be honest, I had never tried raw artichokes, although my mother often prepares them I had not eaten them yet. All remedied anyway and among other things I must say that they are particularly delicious and tasty with the addition of flakes of parmesan on the surface and seasoned with an emulsion of parsley, oil and lemon.
The only care you need to have in preparing the dish is to choose small and tender artichokes, but spring is almost upon us, so it shouldn't be difficult to find good ones: P

Method
How to make artichoke salad
Take some tender artichokes and clean them before cutting them into thin slices.

As you cut them, transfer them to a bowl with water and lemon and leave them there for half an hour.
After the time has elapsed, drain the artichokes and pat them with absorbent paper, then place them in a serving dish.
Prepare an emulsion based on salt, pepper, parsley, oil and lemon juice.
Then dress the salad.
Also add the parmesan flakes.
Your artichoke salad is ready to be brought to the table.
