The Salame Del Re is a typical Umbrian chocolate dessert. Despite the name, the taste has nothing to do with chocolate salami. It is a roll of biscuit dough soaked with alchermes and filled with a double layer of cream: first custard and then chocolate. The result is a delicate and tasty dessert at the same time, with a traditional flavor, reminiscent of the grandmother's sweets of the past ... In short, if you don't know it, this is your chance to try it;)

Method

How to make the king's salami

First of all, prepare the custard: whip the egg yolks with the sugar, add the cornstarch, dissolve everything with the milk already heated with the vanilla, cook over low heat until a smooth and thick cream is obtained.

Divide the cream in half between 2 bowls, add the melted chocolate in one and mix well.
Cover both creams with contact film and let cool.

At this point, switch to the biscuit dough.
Whip the eggs with the sugar, then add the sifted flour with the baking powder.

Pour the mixture into the pan (mine is 36x27 cm) lined with parchment paper and level with a spatula, then bake for 10-12 minutes at 180 ° C in a preheated static oven.
Remove from the oven, cover with a second sheet of parchment paper and roll up gently, then let it cool.

Prepare the syrup by mixing water and alchermes.
Unroll the base again and sprinkle it evenly with the syrup.
Spread the custard first and then the chocolate cream on top, being careful not to mix them together but rather obtaining 2 distinct layers, even if overlapping.

Roll the biscuit dough around the filling again, always with the help of parchment paper, then let it rest in the fridge for at least 4 hours.
If you want a more elegant dessert, cut off the two ends.

The king's salami is ready, sprinkle with powdered sugar and serve.
