There caper salad, or kaparosalata, is nothing but a wonderful one Greek salad with capers. This is a very simple but also very tasty recipe, perfect for the summer or if you want to recall memories of that time you were in the Cyclades;)
Perhaps not everyone knows that capers are very popular and used in Greek cuisine, so much so that even the leaves are used, pickled, in salads and other recipes.
As for this recipe in particular, it is a very fresh but rich in flavor appetizer or side dish that certainly represents a nice variation on the theme of classic salads that we all bring to the table in the summer.
The ingredients are all used raw, so once the capers have been desalted for good, all you have to do is clean and cut all the ingredients and then assemble everything.
Of course, there are many versions of this online caper salad, but the one I ate this summer in Lefkada was just like that :)
How to make the caper salad
Rinse the capers under running water, then leave them to soak in water for at least 15 minutes, then drain and rinse again.
While the capers are soaking, peel all the vegetables and cut everything into small pieces.
Put everything in a bowl, including the well-drained capers, and add the sauce made with oil, lemon juice, salt and pepper.
Let it rest in the fridge for at least 30 minutes.
The caper salad is ready, you just have to serve it!
