Couscous recipe with beef and vegetables of 03-06-2007 [Updated on 27-08-2018]
Last night I prepared an ethnic dinner and certainly could not miss the couscous as a main course. Couscous is a typical food of North Africa, consisting of steamed semolina grains. Traditionally, couscous is served in a large round plate, with the meat or fish and vegetables in the center on a low, round table with guests seated around it.
Couscous is eaten with your hands!
The first recipe with couscous is the one with beef and vegetables .. soon I will make a version with fish.
How to make Couscous with beef and vegetables
Wash and cut the courgette and carrot into cubes.
Fry an onion cut into small pieces in a wok, then add the zucchini and carrots
Brown the vegetables for a couple of minutes then add the meat cut into small pieces and floured, and the peas and brown everything over high heat.
Season with salt and pepper and deglaze with white wine.
Cover with broth and cook for about 20 minutes under cover.
Prepare the couscous as written on the package (boil 2 glasses of salted water, remove from the heat and add the couscous, stirring with 1 tablespoon of oil and letting it swell, stirring for 5 minutes).
Pour the couscous into a large round dish (I used a typical pan for these ethnic dishes they gave me) and pour the meat and vegetables in the center.
