  • 400 gr flour

Bake for about 25-30 minutes until they pass the toothpick test.

When they are ready, leave them to cool a bit and then take them out of the molds on a plate.

For the preparation of the glaze:

In a saucepan, melt 100 g of chocolate together with the 2 tablespoons of margarine, stirring constantly. Let the icing cool a bit and then decorate the muffins.

I was challenged by to prepare a recipe to celebrate the flavors of autumn. And the thought of chocolate, cinnamon and walnut immediately made me think!
Therefore, I chose the ingredients I needed from their store and immediately started cooking. As a loyal customer, I am already familiar with most of their products and brands. I chose pecans from Rapunzel, cinnamon from Niavis it is extremely fragrant and one of my favorites, and the peanut butter, also from Niavis, is fatty and delicious, just like you want a nutritious and healthy peanut butter.

The combination of bananas and chocolate I think never fails, especially if it is a quality dark chocolate. These muffins are easy to make, quick and perfect for breakfast, whether we take it home or on the way to the office.

1/2 teaspoon ground cinnamon

1/2 cup coconut sugar (or more, to taste)

2 eggs at room temperature

1/4 cup coconut oil (or olive oil)

1 cup dark chocolate, chopped

Optional decoration: natural whipped cream, mascarpone cream, chocolate flakes.

Method of preparation:

Preheat the oven to 200 degrees Celsius and prepare the tray for muffins. We can grease the forms with coconut oil or use special paper for muffins.

Because I lost my mixer (this is what happens if you play away with the pots and pans provided), I threw all the ingredients in the robot. Of course I could mix with the goal, but why bother, really.

  • I mixed 170g of sugar with 60g of butter until they are creamy
  • I added 1 or, I stirred until incorporated
  • I added 3 well ripened bananas (if they are blackened, so much the better)
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla extract
  • 4 teaspoons apple sauce (I used an apple compote that is actually as dense as a sauce taken from Mega Image when I was planning to make an Austrian pancake recipe. But about that on another occasion)
  • I mixed all this until I got a homogeneous mixture
  • in a separate bowl I mixed 170g of flour, 1 teaspoon of baking soda and 1/2 teaspoon of salt, then I added them over the banana composition
  • I incorporated flour, I added 70g of dark chocolate cut into small pieces, I mixed and the composition was ready

I poured the dough into the muffin tray and put it in the oven at 180C for about 25 minutes. Some fragrant and fluffy cakes came out, with a less dense texture than banana bread. So that means they ate fast, so I have to do more. Which I wish you too.

4 eggs
2 small and very ripe bananas
75 grams of sugar
200 grams of flour

  5. Rub the yolks very well with the sugar until it melts, then add the previously melted butter and the banana puree. We mixed everything well.
  6. Beat the egg whites very well until they become a firm foam.
  7. Grate the chocolate with a grater with small holes.
  8. Incorporate in the composition of yolk and sugar, grated chocolate and previously sifted flour.
  9. We take two tablespoons of the well beaten egg white and incorporate them in the composition of flour and yolk that we obtained earlier. The dough will be a little thinner and we will be able to easily incorporate the rest of the beaten egg whites, taking care that it is mixed with light movements, from the bottom up to aerate the composition.
  10. The dough formed in this way and which has the consistency of a very thick cream, we put it in small guguluf / muffin forms with the help of a teaspoon. I used 12 shapes of mini guguluf silicone, two star-shaped silicone shapes and two normal muffins. That's how it was & # 8220command & # 8221, to be small muffins and not cake but you can use the composition to make a banana bread cake and use big shapes.
  11. Give the forms thus filled in the preheated oven and leave for 30-35 minutes (depending on the oven). I'm ready when they start to come off the edge a little. If you do the test with the toothpick, you must keep in mind that it will remain a little wet due to the bananas in the composition.
  12. When they are ready, we take them out of the oven, let them cool a little and then take the muffins out of them in the form of a mini guguluf and powder them with a little sugar for decoration.

  • 1 cup banana puree - 2 fruits
  • 2 teaspoons vanilla extract
  • a cup of milk
  • a quarter of melted coconut oil
  • a cup of chocolate flakes

Preheat the oven to 350 degrees. In a medium bowl add the oatmeal, cinnamon, nutmeg, baking powder and salt.

In another bowl, break the two eggs and beat them together with the maple syrup, banana puree and vanilla extract until you get a uniform paste. In the same container, lightly pour the milk and coconut oil, stirring constantly.

2 very ripe bananas, crushed
¼ Greek yogurt without fat
1 tablespoon natural almond butter

1 teaspoon raw honey, unfiltered

Dried ingredients

½ cup of oatmeal and ¼ cup of traditional oats

1 tablespoon sugar substitute, granules

¼ teaspoon of cinnamon
¼ cup of chopped almonds
2 tablespoons dark chocolate flakes (you can also find the version without soy and without nuts, semi-sweet)

Method of preparation

Preheat the oven to 175 degrees. Prepare a muffin tray and arrange 12 muffin papers in the spaces in the tray.

To make oatmeal, simply add ½ of oatmeal to the blender and blend until a fine powder comes out.

Add all the wet ingredients in a large bowl and mix until perfectly combined. In another bowl, mix all the dry ingredients. Then add the contents of the dry bowl to the bowl with the wet mixture and mix until well blended.

Then lightly put the whole oats, chocolate flakes and almond pieces inside.
