These granola bars are great, they can easily be tweaked to how you like. Enjoy for breakfast or as a healthy snack during the day, they are very moreish and we demolished a whole batch before the end of the day.

  • 230g rolled oats, toasted
  • 200g medjool dates
  • 140g unsalted almonds, chopped
  • 85g honey
  • 65g smooth peanut butter
  • Optional additions
  • dark chocolate chips
  • dried cranberries
  • dried blueberries

MethodPrep:15min ›Extra time:10min freezing › Ready in:25min

  1. Place the oats in a large frying pan over medium heat. Stir until fragrant and nutty, about 5 minutes. Remove from heat.
  2. Process dates in a food processor, until little bits remain or finely chop.
  3. Place toasted oats, almonds, dates in a huge bowl and set aside.
  4. Warm honey and peanut butter in a small saucepan over a low heat, stir and pour over mixture, then mix breaking up the dates as you do. Stir in any optional additions to taste.
  5. Once thoroughly mixed, transfer into a baking dish lined with greaseproof paper or cling film. Press down firmly and put into the freezer for 10 minutes to firm up, or in the fridge for an hour or so.
  6. Once firm, remove from fridge or freezer, remove from tray and cut into bars or squares and enjoy.


I added dried cranberries to my bars it made them extra tasty. These are very versatile so enjoy getting creative with them.
