  1. Place the bacon in a large, deep frying pan and cook over medium-high heat, stirring occasionally, until evenly browned, but not crispy, about 10 minutes. Remove the bacon with a slotted spoon, leaving the bacon fat in the frying pan. Pour off all but 2 tablespoons of the bacon fat and stir in the olive oil, butter, onion and garlic. Season with salt and pepper. Cook and stir until the onion softens and the garlic lightly browns, 5 to 7 minutes.
  2. Stir in the balsamic vinegar and bring to a simmer; cook until the liquid has reduced by 1/3. Add the reserved bacon, the halved Brussels sprouts and the chicken stock. Stir, then bring to the boil over high heat. Reduce heat to medium-low and simmer until the Brussels sprouts are tender, yet still slightly firm, about 10 minutes.

This has the potential to be a 5 star recipe, but for me personally the balsamic was too overpowering for the dish, I think I will tweak it a bit and would be a great recipe. I will probably omit the balsamic and the chicken stock and just sautee them in butter and then do the bacon with garlic and sauteed onions. Thanks for the start!-15 Mar 2009

One thing to remember when using balsmic ordinaire is that it is not as sweet as aged(expensive) balsmic. We add a little sugar(old chiefs trick) to simulate the good stuff.-26 Nov 2009

Never did I think I would rate a brussels sprouts recipe as 5 stars. I thought about tossing the sprouts when I got my weekly delivery of organic veggies and saw those in there. but not wanting to be wasteful I figured I would try to find a good recipe to use them in. This was a perfect recipe! I added some cooked quartered red potatoes with the sprouts during the last 10 minutes of cooking and it was so good. Be sure to use good quality balsamic. I used an 18 year aged BV that was slightly flavored with cassis which worked well.-27 Feb 2009

Step 2. Place butter in pan and cook onion and garlic until tender.

  • 1 1/2 teaspoons kosher salt, divided
  • 3/4 teaspoons black pepper, divided
  • 1/2 cup panko (Japanese-style breadcrumbs)
  • 1 tablespoon unsalted butter, melted

Cook bacon in a large skillet over medium, turning occasionally, until browned and crisp, about 10 minutes. Transfer to a plate lined with paper towels reserve drippings in skillet.

Add shallots to hot drippings, and cook over medium, stirring often, until shallots are softened and start to brown, about 8 minutes. Add garlic, and cook, stirring often, 1 minute. Add vinegar, and cook until thick and syrupy, about 2 minutes. Remove from heat, and pour into a small microwavable bowl. Crumble bacon, and stir into shallot mixture. Cool to room temperature, cover, and chill until ready to use, up to 1 day ahead.

Preheat oven to 400°F. Toss Brussels sprouts with canola oil, 1 teaspoon of the salt, and 1⁄2 teaspoon of the pepper. Transfer to 2 aluminum foil-lined rimmed baking sheets. Roast Brussels sprouts in preheated oven until golden and tender, about 25 minutes, stirring halfway through baking. Set aside for up to 1 hour.

Combine breadcrumbs, melted butter, and remaining 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper in a small bowl. Set aside.

Microwave bacon-shallot mixture on MEDIUM (50% power) until mixture can be stirred, about 30 seconds. Toss roasted Brussels sprouts with bacon-shallot mixture, and transfer to a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with breadcrumb mixture, and bake at 400°F until heated through and breadcrumbs are golden brown, about 15 minutes. Let stand 10 minutes before serving.

I made this knowing I would eat them but my husband swore he wouldn't touch them. Well. he lied! They were extremely delicious. I made my own little changes with spices but kept the majority of it the same. Excellent recipe. Excellent!!

We love Brussel Sprouts and this recipe was really good. What I did not do is fry the heck out of the bacon. It would have been better extra crispy on top instead of kept in the dish while the stock was in the pan. Will definitely make again.

As if anything with bacon could be bad, but bacon and Brussels sprouts go together especially well. I did make one change and that was to hold off on adding the bacon until the very end, but otherwise I followed the directions as listed and the timing was spot on. I got rave reviews from all my dinner guests so I would highly recommend this dish.

Made for Thanksgiving dinner. Doubled the recipe (had to cook in two batches). Everyone loved them. Leftovers were (amazingly) still delicious.

Slight change to recipe: sautéed the shallots & garlic, removed them from the pan and held with the reserved bacon. 2 Preheat the oven to 300°F (150°C/Gas mark 2) and line a baking sheet with parchment paper.

4 Using the slicer, cut the bacon and onions into paper thin slices, about 1/16 in. (1–2 mm) thick.

5 Spread them on the baking sheet, cover with another sheet of parchment paper, and dry out in the oven until browned and crisp. This will take about 20 minutes, but check regularly.

5 Deglaze with the maple syrup, spooning the pan juices regularly over the sprouts.

Sprinkle Brussels sprout mixture with bacon and drizzle with the remaining 1 tablespoon honey.
