1. The secrets of an original Italian pizza
The secrets of a pizza are in the dough. The Neapolitan pizza version is the tastiest and most famous in the world. It matters how the dough is made but also the ingredients. Usually only water, flour, salt and yeast are used in the dough. The flour must be of good quality, with protein. For the dough to have elasticity, it must be well hydrated and made of quality ingredients.
If the pizza is baked at home, in an electric oven, it is used for the dough together with the main ingredients (water, salt, yeast and flour) and oil and sugar. The oil makes the dough more fragile, because when the pizza is baked in an electric oven, it is not the same as in a wood-fired oven, in terms of temperature. The sugar helps the pizza to be a little browner, like when it is baked at a very high temperature, in the wood oven. Sugar does not affect the leavening of the dough.
It is very important that the dough is left to rise, being covered for example it can be put in a box with a lid and left overnight in the refrigerator. The dough should rise slowly, approx. 6-8 hours. If it is not refrigerated and is very hot, then it will ferment faster due to the heat, which is not indicated.
Mozzarella is cut into thin sticks. They must be suitable, medium in size. If they are too thin, they are dehydrated in the oven and burned, and then they will not look good on the pizza counter. If they are too thick, the water will remain on the counter, it will not evaporate properly and the pizza will be watery.
